This is the coffee that carried Julijan to a 4th place finish at the 2025 Australian Brewer’s Cup Championship. A fusion of two world-class coffees, interwoven to create something truly captivating.
Fresh tropical fruit and deep florals unfold in perfect sync, revealing sticky layers of lychee, mangosteen, and cherry blossom—like that last sip of a Daiquiri, fading into a warm summer night.
This blend features Diego Bermudez's Anti Maceration Gesha from Finca El Paraiso and Jhoan Vergara's Duo Cherry Hydrohoney Java from Finca Las Flores—chosen not just for their flavour, but for the precision and innovation behind their processing. Every step in its development was designed to enhance complexity and nuance, resulting in a profile that is both striking and deeply memorable.

Innovation meets intention in this unique Gesha. The Anti Maceration process, developed by Diego Bermudez, starts with cherries at peak ripeness, placed inside Diego's proprietary vacuum chamber. At near-zero pressure, the vacuum draws out the cherry's natural juices, which fall to the bottom of the chamber, where another layer of cherries is present. As a result, the beans absorb a concentrated infusion of their own flavours in a controlled, oxygen-free environment. A dehumidification drying process then locks in these delicate aromatics, ensuring an intensely expressive, crystalline cup.

This Java is a product of patience and precision. Handpicked at peak ripeness, the cherries undergo anaerobic yeast fermentation for 60 hours, followed by submersion at 30-32°C for another 36 hours, where microorganisms from the same variety enhance the coffee’s complexity. After fermentation, a crucial hot water quenching step halts microbial activity while preserving the vibrant fruit character. Then comes the duo cherry simultaneous depulping, where the semi-processed cherries are mixed with freshly picked washed cherries, using the natural viscosity of the fresh fruit to assist in depulping. The result is a layered, intensely sweet coffee with juicy structure and lingering depth.
