Panama - Moreno Farms / Gesha Lot GN-01 / Natural

Panama - Moreno Farms / Gesha Lot GN-01 / Natural

We're incredibly excited to introduce Lot GN-01, a stunning Gesha from Sandi Coffee Estate, one of four properties belonging to Moreno Coffee Farm in Panama's Chiriquí province.

Moreno Coffee Farm is an emerging name in Panamanian specialty coffee, quickly establishing a reputation for producing exceptional coffees through meticulous cultivation and innovative processing methods. Today, the family-owned estates are managed by Edilberto Moreno, who has brought together and developed land passed down through generations of his family, continuing their agricultural heritage with a renewed focus on specialty coffee.

Earlier this year, we had the pleasure of welcoming Edilberto to the Brew Methods Atelier, where we hosted an evening of tasting and conversation, learning firsthand about his approach to coffee production. We're delighted to continue that connection and proud to be among the first to introduce his coffees to Australia.

Lot GN-01 comes from Sandi Coffee Estate, situated in Jurutungo, Renacimiento, at elevations between 1,500 and 1,700 metres above sea level. The estate experiences a cool, humid microclimate, with temperatures ranging from 12°C to 22°C, providing favourable growing conditions for Gesha and its distinctive floral character.

What makes this particular lot especially interesting is its approach to natural processing, which centres around an extended, carefully controlled drying method known as Dark Room Drying (DRD).

Following selective hand-harvesting, the ripe coffee cherries are transported to the processing facility, where they undergo an initial disinfection stage before being transferred into a dedicated drying room.

Here, the whole cherries spend an extraordinary 45 days drying in complete darkness, with the environment maintained at 16°C and 50% relative humidity. Unlike conventional natural processing, where cherries are typically dried on raised beds under the sun or inside greenhouses, this method provides precise control over the drying environment, allowing moisture to be removed slowly and consistently.

By maintaining these cool, stable conditions throughout the extended drying period, Moreno aims to concentrate the coffee's natural flavours and aromas while preserving the delicate characteristics of the Gesha variety. The gradual reduction in moisture also helps minimise the fluctuations associated with traditional outdoor drying, providing greater consistency throughout the process.

Following drying, the coffee undergoes a further 25 days of stabilisation before being prepared for export.

The result is a beautifully expressive Natural Gesha, with pronounced aromatics of jasmine and lily, accompanied by the bright citrus character of lemon zest. Elegant and refined, GN-01 showcases the delicate floral qualities that have made Panamanian Gesha so celebrated, with a remarkable sense of clarity despite its extended natural processing.

A wonderful introduction to Edilberto's work, and a beautiful example of the care and attention behind the coffees of Moreno Coffee Farm.
