We’re pleased to offer this standout lot from Ethiopia’s Sidama region—an expressive natural processed coffee from the Yaye Washing Station, produced as part of the Odakko Project. This project brings together around 50 smallholder farmers from nearby villages, all contributing carefully selected cherry at peak ripeness. Built in 2021, Yaye has quickly earned a reputation for precision and experimentation, with a strong focus on clean processing and community impact. Premiums from this project support local education initiatives, reinforcing a model where quality and sustainability go hand in hand.Â
This lot is composed entirely of variety 74158, a selection developed by the Jimma Agricultural Research Center in 1974. Known for its resilience and adaptability, it’s one of Ethiopia’s foundational modern varieties, but in the right conditions—as seen here—it can deliver remarkable clarity and character. Grown at elevations up to 2300 masl, the slow ripening in Sidama’s cool, high-altitude climate allows for greater sugar development and complexity in the cup.Â
The “Special Prep” natural process used here is where things really become intentional. Only the best cherries are selected—around 90% perfectly ripe, with a small portion of overripe fruit to build depth and sweetness. After careful sorting and flotation, the coffee is dried slowly on raised beds under shade for up to 28 days, in conditions designed to extend drying and stabilise the seed. This slower approach enhances flavour development while maintaining clarity, avoiding the muddiness that can sometimes come with naturals.Â
In the cup, this translates to a beautifully layered profile—think cooked berry and jammy red fruits, supported by a soft caramel sweetness and a gentle, wine-like acidity. There’s a richness here, but it’s controlled and refined, finishing with a subtle chocolatey depth. It’s a natural that leans elegant rather than wild—structured, expressive, and incredibly drinkable.Â
