This exquisite coffee originates from smallholders in Worka Chelbesa Kebele, a village in Ethiopia's Gedeo zone. Worka Chelbesa lies in a dense, semi-forest area where the Ethiopian Wolisho and Dega Landrace varieties thrive.
This coffee was processed naturally at local wet mills operated by Negusse Debela, who uses both traditional and experimental methods to enhance coffee quality.
Following meticulous sorting for quality, the cherries were placed onto raised beds for drying with moisture readings taken every day to ensure even and consistent drying. At 11% moisture, the cherries were hulled and then sorted for quality once more, attaining grade 1 quality. They were then stored in grain-pro bags and rested for 30 days for stabilisation.
