Costa Rica - Volcán Azul / Marsellesa / Anaerobic Natural
Alejo Kahle Castro is at the helm of a long-standing family tradition in coffee production, originally started by Alejo C. Jiménez in Costa Rica and Wilhelm Kahle in Mexico, with a dream to produce the world’s finest coffee.
This tradition thrives today, where coffee is grown on fertile volcanic soil, aptly named Volcan Azul, in Costa Rica's West Vallery. Alejo Khale Castro, now managing the farm, focuses on quality and innovation, contributing to the farm’s success in coffee competitions like Cup of Excellence. His approach includes rigorous pre-harvest practices, along with meticulous wet milling and fermentation techniques.
This beautiful Marsellesa varietal underwent a short period of fermentation with a special recipe where pH, acidity, and brix content of the coffee cherries inside the tank were controlled.
Flavour profile: Raspberry, apple, chamomile, honey.
