Colombia Tablón de Gómez Honey Process comes from a project by Forest Coffee, working with approximately 40 producers in the high-altitude mountains of Nariño, near the Ecuadorian border. With elevations reaching up to 2,200 metres, this region’s warm days and cool nights slow cherry maturation, allowing sugars to concentrate and resulting in a rich, complex flavour profile.  

The producers grow and process their own coffee on small farms, harvesting cherries at peak ripeness before a 48-hour fermentation in mucilage. The beans are then dried on raised beds and patios for an average of 18 days, allowing for slow, even drying that enhances sweetness and structure. Once dried, the coffees are blended and stabilised in GrainPro for 30 days in Buesaco, ensuring uniformity and clarity before milling.  

The result is a vibrant, rich, and juicy coffee with deep fruit complexity. Forest berries and red stone fruits take centre stage, with a natural sweetness that lingers long after each sip. A heavier body adds depth, while the bright acidity keeps it lively and dynamic. A beautifully structured coffee that reflects both the skill of its producers and the exceptional growing conditions of Tablón de Gómez.
