Colombia - Penas Blañcas / Gesha / Natural

Colombia - Penas Blañcas / Gesha / Natural

This exceptional Natural Gesha was grown by Jhoan Vergara in Acevedo, Huila, Colombia, and processed at Peñas Blancas, a collaborative coffee processing project founded by Jhoan and Néstor Lasso, two producers recognised for their innovative approach to specialty coffee.

Peñas Blancas was established to bring together coffee producers, technical expertise and advanced processing methods, creating opportunities to explore the potential of exceptional Colombian coffees. By combining careful cherry selection with controlled fermentation and drying, the project aims to produce coffees with remarkable clarity, sweetness and complexity.

This Gesha showcases the elegance of the variety alongside the expressive fruit character associated with natural processing.

For this particular Gesha, the processing begins with the careful selection of ripe coffee cherries, which undergo approximately 72 hours of fermentation in whole-cherry form. Keeping the fruit intact throughout fermentation allows the surrounding pulp and skin to contribute to the development of sweetness, aromatic complexity and fruit character.

Following fermentation, the whole cherries are slowly dried in a temperature-controlled dark room. This carefully managed environment allows moisture to be removed gradually and consistently, while limiting exposure to direct sunlight and excessive heat. The extended drying process helps preserve the delicate aromatic qualities of the Gesha variety while maintaining the fruit intensity developed during fermentation.

But what makes this particular coffee especially meaningful to us is how it came into our hands.

In 2025, our good friend Simon Gautherin selected this very coffee for his competition routine, ultimately using it to win the Australian Brewers Cup Championship.

Competition coffees are selected with extraordinary care. Every detail matters, from the quality of the green coffee and its processing to the way it responds to roasting and brewing. For Simon, this Gesha became part of a winning presentation on the national stage.

Following the competition, Simon had a small quantity of the green coffee remaining, and we were fortunate enough to secure some for our own collection.

It's not often that we have the opportunity to share a coffee with such a direct connection to a championship-winning routine, particularly one belonging to a good friend.

Now, we're making this small quantity available for you to experience.

An exceptional Colombian Gesha with a story that connects the producer who grew it, the people who processed it, and the competitor who brought it to the national stage.
