Brought to you by Forest Coffee, this stunning Pink Bourbon blend comes from two farms in Huila: Los Pinos and La Primavera, managed by Edier Perdomo and Diego Horta. Both Edier and Diego process their coffees independently; however, they employ the same methods to harmonise the flavour profile, aptly naming this coffee - Pink Bourbon Creation—a collaborative effort.

The journey of Pink Bourbon Creation begins with the careful selection of perfectly ripe Pink Bourbon cherries, meticulously sorted to ensure exceptional quality. The cherries then undergo a precise two-stage fermentation: 24 hours in whole cherry to develop initial sweetness, followed by 36 hours in mucilage to enhance depth, complexity, and fruity character.

Following fermentation, the seeds are carefully washed to remove all traces of mucilage before being dried on raised beds for 15 days. Finally, the seeds are milled and stabilised in GrainPro bags for 30 days, allowing flavours to mature and harmonise.

The result is a clean, complex cup with delicate floral aromas, sweet apple, and grapefruit, elegantly balanced by a bright citric acidity. Pink Bourbon Creation is a testament to the dedication and expertise that define exceptional coffee production in Huila.
