Colombia - Finca Zarza / Wush Wush / Advanced Washed

We’re pleased to offer this exceptional lot from Jhonatan Gasca and his family at Finca Zarza in Bruselas, Huila, sourced through Cata Export. In a relatively short time, Zarza has become one of Colombia’s most respected producers, known for its precision-driven approach to processing. Coffees from this farm have reached the highest level of competition, including being used by Jack Simpson in his World Barista Championship–winning routine—firmly placing Zarza among the benchmark producers in modern specialty coffee.

This lot is Wush Wush, a rare Ethiopian variety that has found a new identity in Colombia’s high-altitude conditions. Naturally aromatic and refined, it’s a variety that rewards careful handling—something Zarza executes with complete control, allowing its delicate and expressive character to shine.

The Advanced Washed process here is deliberately layered. It begins with whole cherry oxidation for 12–24 hours, softening the fruit and building early floral and citrus complexity. This is followed by an extended anaerobic fermentation of 48–72 hours, encouraging vibrant fruit expression while maintaining clarity through tight temperature control. After depulping, a final fermentation stage of 24–36 hours refines the profile further, developing sweetness and a gentle caramelised depth that brings cohesion to the cup.

The result is a beautifully poised and expressive coffee—florals up front, followed by delicate stone fruits, a honey-like sweetness, and a clean, green grape elegance. It’s a coffee that feels both precise and effortless, showcasing just how far thoughtful processing can elevate an already remarkable variety.
