Brought to you by Forest Coffee, this Pink Bourbon comes from Finca Resinas in Acevedo, Huila, produced by María Belén Díaz and her family. The daughter of a coffee grower, María has been connected to coffee her entire life and has dedicated more than 12 years to specialty production.
Her experience as a quality analyst in Cauca sharpened her cupping skills and deepened her understanding of flavour, ultimately shaping her meticulous approach to processing.
In 2024, she became one of the first women in the region to earn a coffee processing certification from The Forest Academy, and she is proudly part of the Huila Condor Project—an initiative supporting 96 women producers across the region.
Together with her husband, Narciso Narváez, and their three sons, María cultivates varieties including Papayo, Caturra, Castillo, Borbón Rosado, and Gesha, with the shared dream of seeing their coffee recognised internationally.
The journey of this Pink Bourbon begins with the careful selection of perfectly ripe cherries, meticulously sorted to ensure exceptional quality. The cherries then undergo a precise two-stage fermentation: 24 hours in whole cherry to develop initial sweetness, followed by 36 hours in mucilage to enhance depth, complexity, and fruity character.
Following fermentation, the seeds are carefully washed to remove all traces of mucilage before being dried on raised beds for 15 days. Finally, the seeds are milled and stabilised in GrainPro bags for 30 days, allowing flavours to mature and harmonise.
The result is a clean, complex cup with delicate floral aromas, green apple, and green tea finish, elegantly balanced by bright citric acidity. It’s a beautiful expression of María’s dedication, skill, and the evolving story of specialty coffee in Huila.
