From our friends Elias and Shady Bayter comes this exceptional Pink Bourbon, grown at their beautiful farm, El Vergel Estate. Earlier this year, we had the privilege of visiting El Vergel, spending time with Elias, and gaining a deeper appreciation for their innovative practices and meticulous care.
Grown at 1500 metres above sea level, this Pink Bourbon coffee begins its journey with handpicked, perfectly ripe cherries. The cherries are processed the same day they are harvested to preserve their freshness and quality.
The process starts with a 12-hour pre-fermentation in plastic tanks, allowing the cherries to develop rich, fruity flavours. This is followed by a 24-hour anaerobic fermentation in sealed tanks, where the oxygen-free environment enhances the development of deeper, more complex flavour notes.
Once fermentation is complete, the drying stage begins. The cherries are first placed in a mechanical silo for 4 days to efficiently reduce moisture content and lock in flavour. They are then sun-dried on raised beds for 20 days, regularly turned to ensure even drying.
Finally the coffee is milled and then stored in GrainPro bags for 30 days. This crucial stage allows the flavours to mature and harmonise, resulting in a cup that is both refined and vibrant.
The final profile is a symphony of berries and stone fruit with a delicate malic acidity, showcasing the distinct character of the Pink Bourbon variety and the creative processing techniques of El Vergel Estate.
