Colombia - Diego Bermudez / Gesha / Anti Maceration
Colombia - Diego Bermudez / Gesha / Anti Maceration
Produced by Diego Bermúdez at Finca El Paraíso in Cauca, Colombia, this exceptional Gesha represents years of experimentation, innovation and an extraordinary understanding of coffee processing.
Diego is widely recognised for pushing the boundaries of what is possible in specialty coffee. Through his work at Finca El Paraíso, he has developed highly controlled processing techniques that allow him to explore flavour development with remarkable precision. His Anti-Maceration process is perhaps one of the most fascinating examples of this approach.
Unlike conventional fermentation, Anti-Maceration uses a specialised vacuum system to create an environment of extremely low pressure, limiting oxygen exposure and changing how moisture and soluble compounds move within the coffee cherry.
The process begins with the careful selection of ripe Gesha cherries, which are cleaned and disinfected using ozone before being placed into specially designed vacuum tanks.
As the pressure inside the tanks is reduced, moisture is gradually drawn from the cherries, creating a concentrated liquid known as leachate. Two distinct environments develop within the tank. In the lower section, the cherries come into contact with this concentrated liquid, allowing it to be absorbed back into the fruit. This process is intended to intensify the coffee's natural flavour compounds while minimising oxidation.
Following this stage, the cherries are carefully dried using specialised dehumidification equipment. Rather than relying on high temperatures, the system uses dry air to gently remove moisture, helping preserve the delicate aromatic compounds developed throughout processing.
The result is an extraordinary expression of Gesha, combining the variety's celebrated floral character with remarkable aromatic intensity, complexity and depth.
This particular coffee comes from the 2025 harvest and has a story of its own.
Julijan originally secured this lot as a potential competition coffee, selecting it for its distinctive character and the possibilities it offered on the competition stage. It was carefully vacuum-sealed and frozen as green coffee, preserving its quality while he explored different coffees and approaches for competition.
Competition coffees are often chosen for their ability to communicate something memorable. Beyond simply tasting exceptional, they need to offer clarity, complexity and a sensory experience that leaves a lasting impression. This Gesha was selected with those qualities in mind.
While it ultimately remained in our private collection, we've decided that a coffee this special deserves to be enjoyed beyond the competition stage.
So, we're opening our freezer and making a small quantity available for you to experience.
An exceptional coffee that brings together one of the world's most celebrated varieties, an innovative approach to processing and a personal connection to our own competition journey.
We're incredibly excited to finally share it with you.
