Colombia - Campo Hermoso / Sudan Rume / Australian Enigma Hops

Colombia - Campo Hermoso / Sudan Rume / Australian Enigma Hops

We've managed to get our hands on a small quantity of this rather special coffee from Campo Hermoso in Colombia. Produced by Edwin Noreña, this Sudan Rume features an unusual processing method involving Australian Enigma hops, and is the same coffee used by Tom Hutchins to win the 2025 Australian Brewers Cup Championship.

We originally purchased this coffee in 2025 and have kept the green beans frozen in our freezer ever since, carefully preserving them until we were ready to roast and share this rather unique lot.

Located in Colombia's Quindío region, Campo Hermoso is recognised for its experimental approach to coffee processing, particularly through carefully controlled fermentations and the use of selected microorganisms and additional ingredients. Edwin Noreña has developed a reputation for producing highly expressive coffees, exploring how fermentation can influence flavour, aroma and complexity.

This particular Sudan Rume undergoes an elaborate multi-stage fermentation process, beginning with the careful selection of ripe cherries measuring over 20° Brix. Following an initial cleaning and sorting stage, the cherries undergo 24 hours of low-oxygen fermentation at temperatures between 18–22°C, followed by 72 hours of carbonic maceration.

During fermentation, a liquid known as mossto is collected from the cherries and inoculated with selected yeast cultures and Australian Enigma hops, a hop variety developed in Tasmania known for its aromatic tropical fruit character. The coffee is then depulped, retaining much of its mucilage, before undergoing a further 72-hour fermentation with the inoculated mossto at approximately 18°C.

Following fermentation, the coffee is slowly dried in a controlled greenhouse environment for approximately 10 days, completing a carefully managed process designed to develop its distinctive aromatic profile.

In the cup, expect an intensely aromatic and unconventional profile, dominated by herbal and botanical characteristics. Notes of fresh sage, eucalyptus and indica create a distinctly green, resinous character, with an unmistakable cannabis-like aroma and flavour. There's a remarkable depth to its herbaceous qualities, with a lingering, almost medicinal freshness that makes this coffee unlike anything we've tasted before.

A particularly unusual expression of Sudan Rume, where the Australian Enigma hops and experimental fermentation contribute to a complex, intensely botanical, and sweet fruit-like coffee.

A particularly distinctive expression of Sudan Rume, combining the variety's aromatic potential with an unconventional fermentation process to produce a complex, fruit-driven and memorable coffee.

Flavour profile: Sage, indica, eucalyptus.
