Introducing the PERME Filter—a newly developed, non-woven filter paper purpose-built for specialty coffee brewing.

Made from a proprietary blend of PP and PE, PERME features a unique property that makes it initially hydrophobic, meaning it repels water. As brewing progresses, exposure to coffee oils and acids activates its permeability, steadily increasing flow throughout the brewing process.

This dynamic behaviour introduces a new approach brewing, where flow is initially restricted—encouraging a more structured, predictable, and uniform extraction—unlocking new dimensions of flavour and tactile experience.

It also opens up alternative techniques such as inverse blooming, where water is added before coffee, creating new possibilities in brew control and cup character.
