Colombia - Huila Condor / Washed (Green Coffee) 1KG

Huila Condor is a community-produced washed coffee from Huila, Colombia, bringing together the work of 96 independent women coffee producers across Pitalito, Timaná and Bruselas.

The coffee forms part of the Huila Condor Project, an initiative created to improve quality, education, traceability and access to market for women working within Colombia's coffee industry. Through the project, producers participate in workshops covering fermentation, processing, drying and cupping, giving them greater knowledge and control over the quality of the coffees they produce.

Importantly, the project also focuses on how value is returned to producers. Participating farmers receive payments above the prevailing market rate, with a portion paid directly into the women's own accounts. An internal coffee competition, the Forest Silver Cup, provides another opportunity to recognise individual producers and highlight improvements in quality.

This lot brings together Colombia, Caturra and Castillo varieties grown between approximately 1,500 and 1,900 metres above sea level.

Processing is intentionally traditional and restrained. Ripe red cherries are selected by hand before undergoing a washed process, with fermentation lasting approximately 24–36 hours. The coffee is then sun-dried for 15–20 days.

Huila Condor forms part of our premium regional and blender offering at Brew Methods Green. While designed to offer excellent value and versatility, we think this coffee sits well above what you might expect from a typical regional lot.

It's particularly well suited to espresso, where its caramel sweetness, balanced acidity and generous body make it an excellent option for milk-based coffee. It also provides a strong foundation for blending, pairing easily with more fruit-forward or expressive coffees without disappearing in the final cup. Roasted with a little more restraint, we've also found it can produce a genuinely tasty and approachable filter coffee.

This is a coffee we really like — dependable and versatile, but with enough sweetness, character and quality to be interesting in its own right.
