This exceptional Wush Wush comes from Jhonatan Gasca and his family at Finca Zarza in Bruselas, Huila, Colombia, and was sourced through Cata Export.

In a relatively short time, Finca Zarza has established itself as one of Colombia’s most exciting producers, recognised for a precise and highly considered approach to fermentation and processing. Coffees produced at Zarza have reached the highest levels of competition, including the World Barista Championship, where coffee from the farm featured in Jack Simpson’s World Championship-winning routine.

This lot is Wush Wush, a rare Ethiopian variety that has found a new expression in Colombia’s high-altitude growing conditions. Naturally aromatic and refined, it is a variety capable of producing pronounced florals, delicate fruit and considerable complexity when carefully cultivated and processed.

Zarza’s Advanced Washed process is deliberately layered. It begins with 12–24 hours of whole-cherry oxidation, designed to develop early floral and citrus complexity. The coffee then undergoes an extended anaerobic fermentation for 48–72 hours under carefully controlled temperatures, encouraging greater fruit expression while maintaining clarity.

After depulping, the coffee undergoes a final fermentation of 24–36 hours, further developing sweetness and complexity before being washed and dried.

This Wush Wush offers a particularly elegant and expressive profile. Expect pronounced florals and vibrant citrus supported by delicate fruit and honey-like sweetness, with the structured processing leaving plenty of clarity for the variety itself to shine through.
