Colombia - Finca Resinas / Papayo / Washed (Green Coffee) 1kg

Grown in the Huila region of southern Colombia, this washed Papayo is produced by María Belén Díaz and her husband, Narciso Narváez, at their family farm, Finca Resinas, located in Acevedo.

With more than 12 years of experience in specialty coffee, María brings extensive knowledge of coffee cultivation, quality assessment and processing. Having grown up in a coffee-producing family and previously worked as a coffee quality analyst in Cauca, she eventually established Finca Resinas alongside her husband and three sons.

Situated approximately 1,800 metres above sea level, the farm cultivates several varieties, including Papayo, Caturra, Castillo, Pink Bourbon and Gesha. The family's dedication to quality is reflected in their careful approach to processing and the distinctive coffees they continue to produce.

Papayo is particularly interesting for its close association with Ombligon, with both names frequently used interchangeably. The cherries are recognisable by their elongated shape and pronounced, pointed ends.

For this lot, freshly harvested cherries undergo an initial 36-hour fermentation inside GrainPro bags before being depulped. The coffee then completes a second 36-hour fermentation with the mucilage remaining intact, allowing further flavour development.

Following fermentation, the coffee is washed twice to remove the remaining mucilage and dried under covered structures for approximately 12 days. Once the desired moisture content is reached, the coffee is stored in GrainPro bags in a dark room for 15 days of stabilisation before milling.

The resulting cup showcases the expressive qualities of Papayo, offering vibrant tropical fruit sweetness, delicate florals and refreshing acidity. Ripe papaya, tangerine and cape gooseberry contribute juicy, layered fruit characteristics, complemented by aromatic lavender notes. A creamy, rounded body brings balance and structure to the lively flavour profile.

A beautifully balanced washed coffee with exceptional aromatic complexity, tropical sweetness and a clean, refreshing finish.

Expected flavour profile: Levendar, tangerine, papaya.
