Colombia - El Vergel Estate - Magnum Sidra / Anaerobic Natural (Green Coffee) 1KG

The Magnum Sidra comes from our good friends Elias and Shady Bayter at El Vergel Estate — a distinctive green coffee that showcases their innovative approach to processing and controlled fermentation.

This lot features El Vergel’s unique mossto process. After being handpicked at peak ripeness, the Sidra cherries undergo a 72-hour anaerobic fermentation in sealed plastic tanks with mossto — a juice-like lixiviate created during the fermentation of Java cherries.

The mossto is kept alive under cold storage at 3°C and maintained with water and sugar to encourage an active microbial environment. This carefully managed fermentation is designed to amplify the coffee’s tropical and floral characteristics while retaining the clarity and structure of the Sidra variety.

Following fermentation, the coffee is dried in two stages. It first undergoes mechanical drying in a silo for 2–4 days at controlled temperatures, helping stabilise the fermentation, before being slowly sun-dried for a further 18 days. The dried coffee then rests in GrainPro bags for 30 days before milling, allowing it to stabilise prior to export.

The coffee is shipped carefully in 12kg vacuum sealed bricks to ensure optimum flavour and freshness when it arrives in our Atelier.

Magnum Sidra is one of our favourite coffees from El Vergel Estate and is also featured in our own coffee line up. Its expressive and fruit driven, tropical, and layered that can be approached in a number of ways through roasting.
