This stunning Gesha (also known as Gesha Marcela) comes from our good friends Elias and Shady Bayter at El Vergel Estate in Tolima, Colombia — an expressive Gesha combining the elegance of the variety with a carefully controlled carbonic maceration process.

Grown at approximately 1,460 metres above sea level, the cherries are carefully selected at peak ripeness before undergoing an initial 36-hour aerobic pre-fermentation on tarps. From here, they are transferred into a bioreactor for a further 72 hours of carbonic maceration under a CO₂-rich environment. 

This controlled fermentation is designed to build aromatic intensity, sweetness and complexity while preserving the delicate floral and tropical characteristics associated with Gesha.

Following fermentation, the whole cherries are mechanically dried for 120 hours. This controlled drying stage allows the coffee to reach its target moisture content consistently while helping preserve the characteristics developed during fermentation. Once dried, the coffee is stabilised in GrainPro bags for 30 days before milling and export.

The coffee is shipped carefully in 12kg vacuum sealed bricks to ensure optimum flavour and freshness when it arrives in our Atelier.

This Gesha offers a beautifully expressive profile with plenty of room for the roaster to explore, both as filter and espresso. Expect pronounced florals and a ripe tropical fruit profile, supported by vibrant citrus acidity. The controlled carbonic maceration contributes to a lingering sweetness and depth without losing the elegance of the Gesha variety.

Coffee profile

Cupping Notes: Expressive and aromatic, with tea rose florals, ripe strawberry and tropical fruit, followed by tangerine and a lingering dark chocolate sweetness. Clean, vibrant and well-defined.

Acidity: Medium-high, combining crisp citric acidity with a juicy malic quality. Bright and lively, while remaining balanced and integrated.

Body: Medium, juicy and silky, with a lingering sweetness and elegant finish.
