This Caturra is produced by smallholder coffee farmers across Tolima, Huila and Caldas, with freshly harvested cherries sourced according to the season before being transported to El Vergel Estate for processing.
The coffee is grown at approximately 1,750 metres above sea level and forms part of Forest Coffee's Innovation range, combining an extended fermentation and carefully controlled drying with EA Sugarcane decaffeination.
The process begins with the coffee in whole cherry, undergoing a controlled 120-hour anaerobic fermentation. This extended five-day stage is designed to build greater fruit character, sweetness and complexity before drying begins.
Following fermentation, the coffee is mechanically dried in silos for approximately 144 hours, allowing the drying environment and final moisture content to be carefully controlled. Once dried, the coffee is packed into GrainPro and rested for a further 30 days, allowing the seed to stabilise before decaffeination.
The green coffee is then transported to Descafecol in Manizales, Colombia, where it undergoes EA Sugarcane decaffeination. The beans are steamed and moistened with water before naturally derived ethyl acetate from Colombian sugarcane is circulated through the coffee to selectively remove caffeine. Gentle temperatures and low pressure are used throughout the extraction, with the aim of preserving the coffee's flavour and soluble compounds. The coffee is then steamed again, dried and stabilised, resulting in a coffee that is approximately 99% caffeine-free.
This is an approachable and versatile decaf that performs well across a range of roast styles. In our own cupping, we found notes of ripe persimmon, honeydew melon and papaya, with a subtle savoury quality adding some depth to the profile.
We particularly like its versatility. It can be roasted with enough clarity and fruit character to make an enjoyable filter coffee, developed further for a sweet and balanced espresso, or taken a little deeper for a comfortable milk-based coffee.
It’s a solid everyday decaf for roasters looking for something flexible, enjoyable and easy to work with.
