This remarkable Cenicafé decaf comes from the award-winning Colombian producers at Los Nogales, operated by siblings Oscar, Angie, and Olga Hernandez. This decaf represents the pinnacle of their years of expertise and stands as one of the finest examples we've ever encountered
The process begins with a whole cherry thermoshock treatment to enhance sugar absorption and to pasteurise the coffee. Following this, the cherries are depulped and washed, then subjected to a 220-hour lactic fermentation in mossto, allowing flavours to deepen and evolve.
To remove caffeine, Los Nogales employs a unique decaffeination process known as Ethyl Acetate. Ethyl Acetate is derived naturally from a fermentation of coffee skin and wash water. It begins with an alcoholic fermentation, followed by acetic fermentation to produce a solvent that is mixed and filtered to extract Ethyl Acetate and Ethyl Lactate. These solvents selectively remove caffeine while preserving the coffee's distinct fruity aromas and rich flavours, over a 48-hour treatment.
The result is a decaf coffee that retains a remarkable depth of flavour and complexity. In 2024, Weihong Zhang showcased the exceptional qualities of Los Nogales decaf, winning the US Brewer's Cup Championship with it. This is truly a memorable decaf experience.
