Edwin's approach to coffee production focuses on environmental sustainability, careful agricultural management and precise processing techniques, with the goal of producing distinctive, high-quality coffees that reflect their variety and origin.\u003c\/p\u003e\n\u003cp\u003eAs part of the Alto Amazónico Association, Edwin has continued to develop his approach to specialty coffee, with particular attention to traceability and processing consistency. His farm represents the growing potential of Cajamarca, a region increasingly recognised for its exceptional high-altitude coffees.\u003c\/p\u003e\n\u003cp\u003eThis particular Gesha undergoes washed processing, beginning with an extended 70-hour fermentation period while the coffee remains in cherry. Following fermentation, the coffee is depulped, washed to remove the remaining mucilage and carefully dried. This extended fermentation stage, combined with the washed process, allows the coffee to develop its fruit character while maintaining the clarity and structure associated with washed coffees.\u003c\/p\u003e\n\u003cp\u003eIn the cup, expect a delicate yet expressive profile, with fresh nectarine and cooked red grape sweetness, complemented by soft vanilla undertones.
