While Panama is synonymous with Gesha, Edilberto's focus extends well beyond a single variety. Across their farms, the team is exploring varieties including Pink Bourbon, Catuai and Catigua, with the same attention given to understanding and expressing the potential of each.\u003c\/p\u003e\n\u003cp\u003eIn recent years, Moreno has invested considerably in both agronomy and post-harvest infrastructure, introducing state-of-the-art equipment and greater control throughout processing. Their philosophy is one we particularly appreciate at Brew Methods: use technology and precision not to manufacture flavour, but to produce clean, transparent expressions of exceptional coffee.\u003c\/p\u003e\n\u003cp\u003eWe were fortunate to welcome Edilberto to Brew Methods earlier this year, where we shared his coffees with our community and had the opportunity to learn more about the work taking place at Moreno. We're incredibly excited to continue that relationship and to be among the first in Australia to showcase these coffees.\u003c\/p\u003e\n\u003cp\u003eThis particular lot is a standout natural Pink Bourbon from Sandi, one of Moreno's farms. The cherries are allowed to reach peak ripeness before being meticulously sorted to remove underripe fruit and defects, ensuring only the best cherries make it through to processing.\u003c\/p\u003e\n\u003cp\u003eFollowing selection, the cherries are disinfected before beginning an extended, carefully controlled drying process in whole cherry. The coffee is dried for approximately 40 days in a greenhouse maintained at an average temperature of 21°C and relative humidity between approximately 40–75%.\u003c\/p\u003e\n\u003cp\u003eThis slow, controlled drying environment allows moisture to leave the cherry gradually, giving the fruit and its natural sugars extended contact with the seed while maintaining the clean expression that defines Moreno's approach to processing. Once drying is complete, the coffee undergoes a further 35-day resting period for moisture stabilisation before preparation for export.\u003c\/p\u003e\n\u003cp\u003eThe result is a beautifully expressive Pink Bourbon that demonstrates what we find so exciting about Moreno. The natural process builds generous berry sweetness, texture and depth while retaining the florals and clarity of the variety.\u003c\/p\u003e\n\u003cp\u003eExpect ripe red berries, strawberry and raspberry alongside pink florals and a creamy, yoghurt-like character.
