From the renowned Guji zone of Ethiopia, we proudly present this Grade 1 anaerobic natural coffee. Sourced from smallholders in the Uraga region, this heirloom lot underwent a wine-natural process.
Akin to carbonic maceration, whole cherries were fermented for 4 days in oxygen-free stainless steel tanks equipped with CO2 pressure release valves and temperature controlled below 25°C.
After fermentation, the coffee was sun-dried on raised African beds for 15-18 days, resulting in a cup that embodies Ethiopia's finest coffee qualities: fruity and delightfully floral.
