Ethicus Coffee Roasters is a specialty coffee roasting company located in Shizuoka, which is one of the top three cities famous for tea culture in Japan.
The owner and roaster of Ethicus, Yamazaki-san spent about 15 years away from his hometown after graduating from high school, and that made him realise an almost urge-like desire to give back to where he came from.
Having spent most of his time away working in specialty coffee, he fell in love with the craft, and decided to open Ethicus Coffee Roasters with his wife Ayumi-san in 2018, who previously also worked as a barista and baker in Tokyo for many years.
The name Ethicus was inspired by the Greek word Ethos (Ήθος), meaning the spirit of a culture- the underlying sentiment that informs beliefs, customs, or practices of a group or society.
‘We look for charm in every coffee that we roast and brew, and hope to share that with our customers.’
Ethicus celebrated their second anniversary earlier this year in May, and shorty after opened their second coffee shop – EUPHRAINOO in June, which also serves specialty matcha.
Just last year, they started the ‘Growing Coffee in Shizuoka’ project with local tea and strawberry farmers, as part of the next generation agriculture from 2019. Sounds incredible, we can’t wait to taste Shizuoka grown coffee in a few years time.
